Juanita’s Burritos began in 2018 with a simple goal, a lot of heart, and a strong commitment to our family. What started as a way to help pay for our sons’ football gear quickly grew into something far bigger than we ever imagined.
In the early days, we sold just 20 homemade burritos at a time, made with the same care and recipes we cooked for our own family. Word spread fast, and before we knew it, those 20 burritos turned into more than 100 in-demand burritos, freshly made and proudly served. Long before the sun came up, I was already awake at 1 am, prepping every ingredient by hand to ensure each burrito was made right. On weekends, our kids couldn’t wait to jump in and help, proudly selling burritos alongside me out of our white neon car. Those mornings were early and the days were long, but they were filled with laughter, teamwork, and memories we will always cherish.
What began as a small family hustle quickly became a true passion. We realized we were not just feeding people, we were building something together as a family and sharing a piece of our home with our community. Every burrito sold pushed us to work harder, dream bigger, and believe that this journey was only just getting started.
As demand continued to grow, we knew it was time to take the next step. What began as a small family idea had turned into something our community truly embraced, and we felt a responsibility to rise to the occasion. Taking that leap was both exciting and terrifying, but we trusted the journey. That decision led us on an unforgettable 17 hour drive to Texas and another 17 hours back home, filled with late night conversations, big dreams, and a lot of hope for what was ahead. Pulling back into Pueblo with our food truck behind us was a moment we will always remember.
Once we were home, we got right to work turning that truck into a space that reflected who we are and how we serve. We carefully designed the interior to be functional, efficient, and welcoming, allowing us to keep up with growing lines while still preparing everything fresh and homemade. Every counter, every piece of equipment, and every workflow decision was made with our customers in mind. That food truck became the heart of our business, a place where early mornings, long days, and family teamwork came together to serve the flavors people had come to know and love.
Today, Juanita’s Burritos is still proudly family owned and operated, built on early mornings, long nights, and a deep love for our Pueblo community. What started as a small family effort has grown into a business rooted in hard work, tradition, and gratitude. Every day, we show up with the same mindset we had in the beginning: serve great food, treat people like family, and never forget where we came from.
Coming in 2026, we are incredibly excited to open our very first brick-and-mortar local restaurant at 4000 Thatcher Avenue in Pueblo, Colorado. This new chapter means more space, more opportunity to serve our customers, and the chance to create a place where families can gather, connect, and enjoy the flavors they have grown to love. While the walls may be new, our heart, recipes, and commitment to quality remain exactly the same.
From our award-winning green chile and bold, flavorful salsa to the burritos that started it all, Juanita’s Burritos is more than just a place to eat. It is our family’s story of perseverance, sacrifice, and doing things the right way, even when it is hard. Every burrito we serve is our way of saying thank you to the community that believed in us, supported us, and continues to be part of our journey.
